Blueberry Pancakes

 

Ingredients

Whole wheat flour ½ cup
All-purpose Flour ½ cup
Sugar 2 tbsp.
Baking powder 1 tsp.
Baking soda ½ tsp.
Salt ¼ tsp.
Plain Yogurt ¾ cup
Butter, melted 2 tbsp.
Lemon juice fresh 2 tsp.
Vanilla extract ½ tsp.
Eggs lightly beaten 2
Blueberries fresh 1 cup

Directions

  • Measure and combine flours, sugar, baking powder, baking soda, salt in a large bowl stirring well with a Wisk.
  • Combine yogurt, butter, lemon juice, vanilla extract, eggs in a small bowl, and add this mixture to flour mixture stirring until smooth.
  • Pour about ¼ cup batter per pancake on a non-stick skillet. Top each pancake with 2 tablespoons of blueberries. Cook over medium heat, until the edges look cooked, carefully turn the pancake over, cook until the the bottoms are lightly browned.
  • Serve hot with some maple syrup.
