Chocolate lava cake

Chocolates are one thing that makes me go mad!!!
so there is nothing better than an homemade chocolate lava cake for those sudden chocolate cravings !!!

serves 4

4 ounces or 2/3 cups semi-sweet chocolate chips
4 ounces of unsalted butter
1/3 cup sugar
┬╝ cup all- purpose flour sifted
2 eggs

Preheat the oven to 400 degree Fahrenheit and butter the ramekins and keep them aside.

We need to now melt the chocolate and butter. The best way is to pour some water in a small saucepan with a bowl bigger than the saucepan on top of it with chocolates and butter in it, in this way the steam from the boiling water in the saucepan will heat the bowl of chocolates on the top and melt the chocolates and butter. I would recommend this process over a microwave or skillet as it does not burn the chocolate.

Beat the eggs along with sugar for a smooth light yellow paste. We need to mix the chocolate mixture with egg paste now and since the chocolate mixture is hot, it might cook the eggs and curdle it. To avoid getting the eggs cooked, add 1/3 of the chocolate mixture to the egg paste and continuously whisk it to tamper the eggs. Continuously whisking with a small portion of the hot chocolate avoids curdling, after a while add the rest of the chocolate and incorporate it well into the mixture.
Then slowly fold in the all-purpose flour. Fill the mixture into the ramekins, place it on to a baking sheet and cook for 7 minutes and keep checking till the sides are hard and the center is a little wobbly.
