Weekends are the days when we want to relax. We wish, we do not have to do any chores and we can just relax. Not having to worry about getting up early, planning for the day, reading kids for school and making their lunch boxes… and when the word lunch hits your mind you suddenly hear your tummy grumbling and everyone’s around you!!!
And then the reality of you getting back into the kitchen is so painful!!! We try to come up with shortcuts and quick recipes to just help us get out of the kitchen as soon as possible (and be tasty at the same time), this is one such recipe that could be made ready alongside with your cup of coffee (tea in my case) and help you go back to your family
3 tablespoons oil
1 teaspoon mustard seeds
1 sprig curry leaves
3 green chilies (add more or reduce as per taste)
¼ cup raw peanuts
1 small onion
1 ½ cups thick poha (beaten rice)
2 teaspoon salts (add more or reduce as per taste)
2 tablespoon lemon juice
1 teaspoon turmeric powder
4 sprigs coriander leaves for garnish
- Add water to the poha (beaten rice) and drain it completely. Add 1 teaspoon of salt and the lemon juice and mix it using a fork carefully not mashing the rice. Set aside
- Heat the oil, add mustard seeds let it crackle then add curry leaves and chilies, sauté it and add in the peanuts and sauté for 2 minutes till it changes color to light golden brown. Now add in the chilies.
- Add the onions and sauté till it changes to light brown.
- Add turmeric and 1 teaspoon of salt, sauté it and then add the poha mix well. Garnish with chopped coriander leaves.
